Join us for our second event highlighting the Blackberry Farm Cookbook by Chef Sam Beall. Blackberry Farm is a resort in Walland, Tennessee that showcases the land in every way - through their seasonal activities, luxuries, and most intriguing to us - their restaurants! With the intention to preserve and protect, the resort has their own gardens that supply fresh produce to each restaurant on the lot. The resort now has a fellowship program in the late chef Sam Beall's name to train chefs in their culinary and hospitality skills and set them up with partnerships around the world.
This cookbook showcases the farm to table concept as well as the diversity of the experiences that each chef brings to Blackberry Farm. We're featuring the following recipes straight from the cookbook:
- Blackberry Farm Biscuits
- Heirloom Tomato Terrine
- Sweet Tea Brined Chicken with Green Goddess Potato Salad
- Grilled Chili-Rub Rib Roast with Summer Squash Casserole
- Blackberry Cobbler with a Toast White Chocolate Ice Cream

Thursday July 31st
At the end of the month, experience a tasting menu curated by Chef John DaSilva inspired by Chef Daniel Kinch's Manresa: An Edible Reflection. In an effort to showcase the community around him, Chef Kinch draws inspiration from California's land and sea, using local produce year-round. In Manresa, Chef Kinch details his thoughts on building a dish: the creativity, experimentation and emotion that go into developing each plate and how a tasting menu ultimately tells a deeper story. This 6-course experience will feature:
- 25 Tomatoes, Pistachios and Allium Flowers
- Smoked Avocado Ceviche
- Corn Pudding & Lettuce Velooute, Crispy Mushrooms with Sweet Corn Croquettes
- Summer Bass, Beans with Pepper and Citrus Leaf Curry
- Lamb & Vegetables Roasted with Summer Savory "Navarin"
- Apricot, Fried Rice, Apricot Pit Sherbet, and Sea Salt & Vanilla Caramels
